A warming autumn stew, similar to an Italian ribollita soup but with a Mexican twist
In 2007, I decided to study nutrition in my spare time. Four years later, I graduated from The Institute for Optimum Nutrition as a Nutritional Therapist. Since then I’ve trained in California as a plant-based chef, returned to London to teach cooking classes, run supper-clubs and a pop-up restaurant. More recently I’ve downsized, moved to Scotland, become a community gardener and now work part-time as a community garden chef and food development worker in Edinburgh. My studies still continue as I’m learning all about Ayurveda. Life constantly evolves and this is a space where I share my recipes, how I’m living and what I’m learning.
